Yogurt Parfait
It's recipe time again. This one has become a favorite on the Law Family Homestead. My mother-in-law introduced it to us after seeing something similar in a magazine I believe. She fed it to my boys one evening for super while they were babysitting. It turned out to be a hit all the way around.
It makes a quick light snack or a light supper also. We especially like it during the hot summer months when nothing sounds good because it is so hot and the last thing you want to do is turn on the oven and stove. If you have muffins made ahead and frozen, it is even faster.
So, step one - make a pan of muffins, any kind will work. Pick your favorite. We like chocolate, apple, and pumpkin.
Next - gather up your homemade yogurt, fruit (canned or fresh) and a serving dish.
Grab a muffin and either split it in half or break it into bite-sized pieces and place in the bottom of your serving dish.
Next: spoon some yogurt over the top of the muffins.
Then slice or spoon your fruit of choice over the yogurt. We've enjoyed bananas, berries of all sorts, canned fruit, etc.
Then top with another layer of muffin, and another layer of yogurt. You can stop with the yogurt or add some fruit on top as a garnish.
There are a multitude of variations you can do with this one, to suit the taste of all in your household.
